I hate to freak you out but… holidays will be here before we know it. And you know what that means?
DEVILED EGGS SEASON IS ALMOST HERE!!!!
Are you as excited as I am? I could make myself sick on those and homemade pie and mashed potatoes and… Ok, I just like to eat. Forget that “back to size 4” for my 20th upcoming anniversary! What were we thinking having our wedding in the height of delicious baked goods season?
Ok, back to the easy peasy deviled eggs …
Here’s what you’ll need –
1 dozen boiled eggs
1/2 cup Mayo
2 teaspoons yellow mustard
2 teaspoons white vinegar
1/4 teaspoon sale (or more if you grew up in my family)
paprika (I don’t really know why except to make the eggs look pretty?)
Peel all of the eggs and cut in half long ways. Pop out or scoop out the yolks and place in a mixing bowl. If you’re a good Southern woman, put those halved egg whites on a deviled egg tray. If you don’t own a deviled egg tray, then bless your heart and place those halved egg whites on just any old plate. Now here is a great tip from my Momma… Use a pastry cutter to breakup the egg yolks.
Yes, a pastry cutter. She has so many tricks up her sleeve when it comes to cooking and life. Crumble up the yolks and mix in the rest of the ingredients until it is a smooth mixture. Dab a spoonful back into each egg white on your egg tray. Viola! Easy Peasy Deviled Eggs!
