I’ve officially been living in crawfish country for over 6 months now and am enjoying the start of the season. Oh, you might not know.. Crawfish season starts just as Mardi Gras season ends. At least, I’m guessing that, from all the side of the road trucks and shack like business marquis announcing the arrival of the mud bugs.
While I’m excited about when I get to go to my first Louisiana boil, I’m not half as excited as I am about crawfish pies. Have you had the chance to ever eat one? If not, stop what you are doing and cross the Louisiana boarder nearest to you!
Although wikipedia has a picture of a pie-looking concotion, I prefer the folded over half moon pastry stuffed type pie. It’s stuffed with delicious goodness of spices, sauces, rice(or breadcrumbs in Emeril’s recipe), and of course there’s cooked crawfish tails. I could eat half a dozen of these and just about make myself size from overindulgence! Oh, wait, I did that last week at The Blind Tiger. A local place in Shreveport known for its Louisiana cuisine. Here’s a picture of my appetizers/meal… and I didn’t share! LOL
I’ve tried out crawfish pies in 3 different places around here… Bergeron’s(my favorite), Raceway gas station on Benton Road just north of I220, and The Blind Tiger just over the river in Shreveport. As you know, with me, if it’s not from a box or a drivethru I’m likely not cooking. LOL So this Friday’s roundup is all about recipes for crawfish pies – foldovers, traditional, etc. Get ready for your mouth to water!
