Have you ever had only an hour before a potluck party and realized you didn’t have anything to bring?
This is a go to recipe that my mom, grandmother, and great-grandmother used for luncheons, dinner parties, and get-togethers. It is easy to make, quick, and few ingredients.
A handful of Colby Jack shredded cheese
A handful of Sharp Cheddar shredded cheese
2oz of diced pimento
2-3 Tbsp of Olive salad mix or chopped diced olives
1+ Tbsp of Hellman’s mayo to taste (I made my recipe without mayo.)
For the olive salad mix, I used Monjunis Italian Olive Salad being that it’s a Louisiana thing!
If you don’t have any Italian Olive Salad at your grocery store, no worries grab some olives and chop them up. Get a bowl and add two heaping table spoons of olive salad. Add 2 ounces of pimento. 1/2 – 1 cup of each cheese. Mis these ingredients.
At this point, add mayo if you like. My mother, grandmother, and her mother would add a tablespoon or two at this point. I prefer the recipe sans mayo so this is when you prep your bell pepper. Cut the top part out of a bell pepper and then slice down the sides like this… Makes a pretty looking flower.
