Have you heard of the largest fruit in the world?
This week’s Foodie Friday Roundup is about the amazing Jackfruit! It grows in southern India and the rainforests of Malaysia. A mature tree can bear 200 fruits per year with an older tree able to produce 500. Whew! That can feed a bunch of people considering this fruit can weigh up to 120lbs (55kg). WOW! That’s as much as some people weigh!
From what I’ve read online, the unripe fruit is a good substitute for meat for vegans/vegetarians and the ripe fruit is sweeter and great for desserts. I purchased a ripe jackfruit(I think it was ripe) from Trader Joe’s, and it weighed only a mere 17 pounds. Ever imagine purchasing a piece of fruit for over $20? It was worth it to get to learn and experience something new!

Then I watched a video about how to cook the seeds…
The skin of the fruit was really tough to cut through and very very sticky. Luckily, my husband is super strong and we have some sharp knives (which had to be sharpened afterwards).
The seeds weren’t too hard to pop out of each of the pods after they had been separated from the skin.
I really liked the cooked seeds. The flavor and texture reminded me of lima beans which I really like.
It was easy to hull these after they were boiled…
…and were a delicious snacks for several days. (These were just some of the seeds that were harvested. There were so many!)
The fruit was kind of sweet like a cantaloupe but they had a somewhat unusual after taste that we weren’t used to. Plus, it was interesting that the fruit kind of peeled off like pods…
This was just some of the fruit/seeds from the Jackfruit I had purchased… So Much Food!
I can’t really describe exactly what the flavor was since this is something I hadn’t ever experienced before. I like it but this is really, really filling. Our family of 5 could have eaten on this fruit for several days (if they had liked it). I’m not sure how long it stays fresh but I left it in the fridge for several days eating a bite here and there.

These are just a fraction of the recipes that use Jackfruit. It seems to be a great meat substitute for vegan meals. I enjoyed the fresh fruit and the boiled seeds(with a pinch of salt). If you are looking to experience a new type of food, then check with your local grocer for the giant Jackfruit and try it out. You might just love it!
