Looking for a super easy to make dinner? Let me introduce you to this easy peasy cajun bake idea that my sweet niece gave me. It was enough to feed 2 adults and 3 young kids.
6 mini corn on the cobs (or enough for who you are serving)
1 small bag of yellow potatoes
1 lb bag of frozen large shrimp (get them pre-peeled or you’ll need to peel these after dethawing them)
1 package of Cajun Style Andouille sausage
1 stick of butter
1/4 cup of olive oil
1/4-1/2 cup of Chef Paul Prudhomme Magic Shrimp Seasoning (or cajun spices of your choice)
PreHeat oven to 450 degrees.
Put the package of shrimp in a large bowl and fill with warm to hot water. Soak until thawed while in bag.
Place at least two layers of aluminum foil on top of a cooking sheet with sides.
Put potatoes in a pot and cover with water. Boil until the potatoes are soft when poking with fork.
Put corn in a pot and cover with water. Bring to a boil. Boil for 5-6 minutes.
Cut up the sausage into little circles or desired shape. Scatter these on the cooking sheet.
Drain water from the corn on the cob and the potatoes and scatter these on the cooking sheet.
Drain the peeled shrimp and scatter these on the cooking sheet.
Melt the stick of butter and mix with olive oil and spices. Pour the mixture over the ingredients on the cookie sheet. Use a wooden spoon to stir around all the ingredients with the mixture if needed.
Bake for 16-18 minutes.
My husband, my oldest, and I liked the Cajun bake dinner. Our other two kids weren’t as big fans but they are super picky eaters and don’t like shrimp or sausage. There were some leftovers but not much. Hope that you enjoyed this easy to make meal as much as I have! 🙂
